Can I follow that tutorial but instead of ISPConfig3 use Cpanel/WHM? I will try the tutorial and post back on how it went.

That depends on how the pages are programmed/optimized, how many traffic you expect, etc. But generally I think you should increase your RAM (like (GB or more) - the rest looks ok.
