Setup a centos 7.9 server for a company years ago with ispconfig which of course does site backups & has raid setup for drive mirroring. But need a graphical (gnome installed) easy to use (for non linux it staff) that can backup to external drive nightly or weekly on live server. Which has or I can create a boot disk with restore capability. Thanks

Not advisable. And I thought the ISPConfig user interface also has a download option in the backup tab for the web site? I think it is also possible to setup a cron job to do that.

if the interest is in backup a whole disk image, Veeam can be the best option
    https://www.veeam.com/products/free/linux.html

you would need to install the "Free Agent for Linux" to create the backup disk image and also the recovery media. This would be enough for one server.
Although you could use also the GUI tool "Veeam Backup & Replication Community Edition"
    https://www.veeam.com/products/free/backup-recovery.html?ad=downloads

this additional tool is intended to be used from a remote Linux or Windows to manage the backup/restore operations. Despite this added tool is focused for multiple clients, it could facilitate the task for a Windows user.
    In summary:
    - the Free Agent for Linux should be installed in the server to create the disk backup images.
    - with that same Free Agent for Linux you can create one .iso recovery media to boot/rescue/restore in case of failure
    - optionally, you can install "Veeam Backup & Replication Community Edition" in whatever OS to manage the backup/restore operations from a remote client

This tutorial is good to start:
