If you change installed version of a package ISPConfig administers, you break ISPConfig. It might still work but usually does not. So you should not upgrade nginx from 1.18 on Ubuntu 22.04 if you want to continue using ISPConfig.
Upgrading your installation to Ubuntu 24.04 gives you nginx version 1.24. This works with ISPConfig.
Upgrading further to Ubuntu 26.04 which uses nginx version 1.28.3 is not yet supported by ISPConfig. Support comes eventually.
If you really must have nginx version 1.30, set up a test system where you install nginx and modify ISPConfig so it works with that version of nginx. This might be quite a lot of work.

Personally, I won't upgrade Nginx separately and therefore, I do not give any instructions for that. To get a newer Nginx version, better do a Ubuntu dist upgrade to 24.04, and as soon as ISPConfig adds support for Ubuntu 26.04, then you can upgrade to Ubuntu 26.04 as well.
