if my websites are getting close to filling my www directory, (120 gig) how hard would it be to add an additional 300 gig drive and use it only for the www??

That shall be not a big problem.

    1) Install the new harddrive, partition and format it.
    2) mount it to e.g. /mnt/www and copy the contents from your www directory to it. You must copy it with preserved permissions!
    3) Change your fstab so that your new harddrive is munted as your www directory.

Dont delete the files on the old www drive until you tested everythind ;)

right on, so in the 2.1.2 version having 2 hard drives wont work together? like my 120 and my 300 to make 420? i assume will be a future feature?

for all user a very nice extension for the installation of a debian system is LVM!!!
you can resize partition, can add partition, and all these things without any problems of the installed software.

That has nothing to do with ISPConfig, rather with your partitioning. As stefanr suggested, LVM is what you're looking for.
