How can I add the php-mbstring module to apache2 after the installation is complete? Normally I would just remove apache2 and compile it again with php-mbstring but since this system is live I am hoping I have another option. Any ideas?
Thta depends on how you installed your system. If you followed one of the perfect setup guides, you will just have to install zthe php-mbstring package from your linux distribution. With all modern linux distributions it is not nescessary anymore to recompile apache or php (if a common module is missing) as they are all compiled with module support.
