I changed timezone of my server setup under Ubuntu 16.04 LTS and then command date shows proper date and time. Unfortunately in log files ex. /var/log/mail.err I have still time before changes (in this case 2h in back). What to do to fix it?

I think changing it won't change current log, only the future one. Do read this for mysql as well. But have you restarted the relevant service(s) including cron or rebooted afterwards?

I tested it on postfix and dovecot, because currently I try secure it. They were restarted few times but logs in mail.err and mail.log are still with wrong time with 2h back. :) I didn't reboot server and cron.

    EDIT
After reboot server is still this same in mail logs.
