If I copy the dkim DNS-Record without the quotes (quotes inside key). The dkim DNS-Record Key must not be the same as the one created by ispconfig does the dkim work the same?
I don't understand your question. Ispconfig generates a key pair in the mail module, writes the private key to the mail server and the public key is available to display if you use external DNS servers; if it displays it in a format that isn't accepted by the external service, you have to reformat it as needed, ispconfig does not have an option to do that.
The reason for the quotes is that some services require them to split the long key, others don't want it at all. See https://git.ispconfig.org/ispconfig/ispconfig3/-/issues/5741#note_92436
