I would like to know if it was possible to set the root and home partition so that it uses the f2fs when installing debian here is my current partitioning
    512MiB ESP
    32 GiB Root
    (Remainder) Home
    16 GiB Swap
I tried to see if there was an option to use f2fs but didnt see anything

May be it is not fully supported? Otherwise, it should be there as an option.

I normally use flash ability for boot, if that is possible.

F2FS (Flash-Friendly File System) is most innovative file system with specialization for computers and laptops with SSD.
Debian based distribution with F2FS support is SolydXK Linux.
Video guide you can found on YT with title:
" Instlall Debian based SolydXK on F2FS file system"
