You can make up a hostname like server1.example.com and put that one into /etc/hosts, or you buy a "technical" domain (that you don't use for web sites and email) and use that one for the server. If your hostname is server1.example.com, I'd use example.com for mydomain, server1.example.com for myhostname, and example.com, server1.example.com, localhost, and localhost.localdomain for mydestination.
