I'm pretty sure that you can. I only use 1 NIC but I have 3 IPs plus a VPN channel (eth0, eth0:1, tun0, etc.). In the configs where appropriate I specify the IP(s) I want to use. Works as expected.
Yes. Configure both NICs and then add the IP addresses to Management -> Server -> Settings (if they aren't already listed there).
