I am in the process of (finally) updating my server, but just curious whats the difference with these 3 set-ups, apart from the software use..? It's not easy to notice at first glance but they use different softwares. The first is the standard using Apache for web and DoveCot for email The second uses Nginx for web instead of Apache and Dovecot for email The last uses Apache again and Courier for the email instead of Dovecot If you are unsure which to use just go with the first standard setup, it work and it works well. I've used the first setup but with Ubuntu 12.04 with no problems at all!
