In my eyes the question here is not about stability.
If you say you want to use a specific CP, than this gives you the first limitations on what OS to use.
The other limitations come from yourself, e.g. the need for always the newest packages (e.g. php 5.2 instead of a working + patched php 5.1). There a distros like CentOS (as RedHat clone), that just take a relase, and only patch it but not update it that often, same with ubuntu.
Another thing is how familiar you are with a distro, e.g. packagemgmt (debian with apt/aptitude, centos/fc with yum, suse with jast...)

So there won't be an answer like, take xyz and that's the best. But there will be good ones fitting your needs, that could be in my eyes debian (or ubuntu), centos (or fc).

Why is CentOS not that stable for you?
I am running this on 4 Servers without big problems, with the shipped packages.
What I like with it is that it is a clone of RedHat Enterprise...
But also Debian is fine ;)

I think that if you do a poll here, you will see that most users here use Debian (Sarge and/or Etch)

One of the reasons is the easy way of updating the system (apt-get update and apt-get upgrade ... )

I'm using Debian Etch on all my servers (3) with no problems what so ever (exept when I fu*k up).

Please do not get me wrong! I'm sure all other big Linux system would run just as good on my servers.
