Should I perhaps be setting an MX record for server.schwimserver2.com? It being the mailserver, does it need it?
That's not necessary, what you need is just an MX for schwimserver2.com if you want to use this domain in email addresses. server.schwimserver2.com needs to be an A-Record that points to the IP of your server, which is the case according to your screenshots. I did a small test of your smtp server: https://mxtoolbox.com/SuperTool.aspx?action=mx:scotchandiron.org&run=toolpage# The reverse dns record and smtp banner seem to not match and the server seem to have nor ssl. Please post the /etc/postfix/main.cf file and the /etc/postfix/master.cf file from the server.
Remove the # in front of the submission and smtps lines (line 16 and line 28) and then restart postfix.

My guess is the domain is wrong in your DMARC record. It should be Code: _dmarc.scotchandiron.org. TXT 3600 "v=DMARC1....."
Oh, I hadn't applied it to the subdomain, that gets it found. I'm now getting an error "DMARC Quarantine/Reject policy not enabled" I've used a dmarc generator provided by dmarc.org and did fill out everything as instrcucted: What am I still missing to receive the error?

I did infact read that. It states: and instead of letting someone know how to, they link you to their paid services. I'm having problems figuring out how to set a quarantine or reject policy. Is it just setting p and sp to quarantine or reject instead of none?
From looking at https://dmarc.org/overview/ , it seems that setting it for domain or subdomain(p or sp) is the answer.
