You have very little memory and swap on that host. Virus scanning probably can not run.
You have installed ISPConfig development version, that is not a good idea unless you participate in ISPConfig delvelopment. Development version does have bugs.
Clamave is not running, my guess is it can not get enough memory and stops.
Certbot is installed instead of acme.sh. I thought recently installed ISPConfigs have acme.sh? Certbot works but new installed systems should have acme.sh.
I did not read mail log. Extract the relevant parts that show the failed messages only and paste those in CODE tags.

Reinstall may be the easiest way to get a working system. I do not know how you managed to install the development version. How did you install ISPConfig? With autoinstaller or following which Howto?
You might be able to repair your system by "upgrading" it to stable version and then fixing the errors until it runs OK. For e-mail server setup, my signature has link to e-mail Tutorial.
Anyway, if installing again use ISPConfig autoinstaller. Find the instructions from ISPConfig domentation web page. https://www.howtoforge.com/ispconfig-autoinstall-debian-ubuntu/
The memory problem remains. When you install again, make bigger swap. I suggest 4 GB swap partition. If you can not make bigger partition, add swapfile so that total swap is about 4 GB at least.

as @Taleman states in post #2. the amount of ram is way too low.
you might, just, get away with 2GB of ram, but i suspect you will still end up with OOM issues. i would suggest using 4GB as the minimum, that should give clamav enough overhead to keep the virus definitions in memory without having to stop other services to conserve ram.

you can just run ispconfig_update.sh to update ispconfig, you can select the stable version as the first answer (should be the default anyway)

i don't see anything in the mail logs that isn't related to clamav issues, which are all likely to be due to the service stopping due to lack of memory. i suspect you'll find most, if not all your issues disappear just by increasing the amount of memory.

Why not make bigger swap? It solves the too little memory problem and you can run clamav to filter out messages containing a virus.

if you don't install clamav, i believe you'll need to configure postfix to not use amavis or rspamd to scan mail for viruses.
i think doing that would also mean that you wouldn't be able to sign outbound mail using DKIM.

But I still say adding swapfile would solve your not enough memory issue.
