ISPConfig makes backups in /var/backup/, if you have done updades you might have backups there. Restoring dbispconfig datebase gets you that deleted server back.
Restoring /var/www does not help you, the removed server was not there.
Make sure you have backup of website files and databases so you have the option to rebuild the server.
