Did you also remove the problem domain files in /etc/letsencrypt/live/ and /etc/letsencrypt/archive/ like ahrasis told you to do in #15?
I can see you have new certs based on tradingforum.it-0001.conf in your renewal folder but I couldn't be sure of whether your problem is really re-occuring and what is causing your problems to re-occur. I noted a backup conf file for tradingforum.it, try moving it to other folder and then try following the LE FAQ mentioned by @Th0m again. You can also try reading the above suggestion by @till for the same problem, where from this github issue and in other, problem like yours was resolved by deleting only the conf file or if there are broken LE symlinks, they can be fixed by a script linked in that github. It would be, however, really strange if the new LE SSL certs issued also have broken symlinks.
