Why does ispconfig and so many other hosting packages only allow one ssl certificate per IP address? I have setup multiple SSL certificates for virtually hosted domains on one IP before, so I know that it can be done. The process is about the same as setting up a virtual domain, but under the SSL area. So if it can be easily done, why does ispconfig and so many other hosting packages not let you do it?

That is not true. Obviously you did not read my post very well. On a server that I helped run last year, we had 3 running on a single IP. You set it up the same way as you setup a virtual website on one IP... It has been a while, but I believe you just put * for the IP. I was just reading a How-to about it the other day also, I stumbled upon it when trying to figure out why so many control panels do not allow it. Actually... It is. I did. These solutions have to be considered experimental. Traditionally, you need one IP per HTTPS web site.
